It naturally occurs in raspberries, strawberries, plums and even cauliflower. Finnish xylitol is xylitol derived from birch. The very term xylitol may apply to other fruits and vegetables. Then most often it is made from corn. Depending on the product from which it is obtained, we have different methods of acquisition. Birch is produced by fermentation carried out by bacteria and yeast. However, the one from maize is produced by biomass hydrolysis.
Xylitol, which looks like sugar and even has a similar sweetness, differs from it in particular in its calorie content. Its calorific value is much lower, up to 40%. 1 gram is just 2.4 calories. Its glycemic index is only 8, for comparison traditional sucrose is IG = 70, and glucose is up to IG = 100. Thanks to this, xylitol does not raise our blood sugar levels as much as traditional sugar. Therefore, it works well as a sugar replacement for people who should exclude products with a high glycemic index in their diet, and do not want to give up sweetening coffee, tea or sweet snacks and cakes. Xylitol is usually birch sugar, but it can also be obtained from other plant products. It is a polyhydric or sugar alcohol derived from xylose. Its structure affects the stimulation of receptors responsible for the sweet taste on the tongue.
In food, xylitol is most often found in chewing gums and candies. It is increasingly used as a sugar replacement in healthy versions of sweets and cakes. It is ideal for sweetening coffee, tea, smoothies, desserts and ice cream. It is resistant to high temperatures, so you can swap sugar in xylitol recipes with confidence.
The presence of xylitol in gums is not accidental. When consuming xylitol, it does not ferment with bacteria and thus do not produce acids that have a negative effect on enamel. It also affects the reduction of oral pH and increased saliva production, which has a positive effect on the condition of our teeth. Xylitol also helps to facilitate the absorption of calcium, so it is worth that people who face deficiencies include it in their diet. However, it has one disadvantage, if it is consumed too much, it can cause laxity, so you should control the amount consumed during the day.
